Easy Aloo Samosa Recipe

FOR 12 SAMOSAS

INGREDIENTS

For the dough
2 ½ cups of all purpose flour
1 tsp of ajwain
½ tsp of cumin(crushed)
1 tsp of salt
4 tbsp of ghee(melted butter)
Water as required(about ½ cup)
For filling
2 tbsp of ghee(melted butter)
1 tsp of cumin
4 to 5 medium sized potatoes
1 tsp of red chilli powder
1 tsp of chilli flacks
1 tsp of coriander powder
1 tsp of garam masala
1 tsp of salt
2 to 3 green chilli
½ cup of fresh coriander
For glue
2 tbsp of flour
1 tbsp of water
Vegetable Oil for frying

PROCEDURE:

Dough: In a bowl add flour, ajwain, salt, cumin and ghee. Lightly mix it with hands. Add ½ cup of water and start to knead slowly, add water as you need. It takes a while and knead it until dough gets smooth. Cover the dough with plastic wrap or wet kitchen towel and let it rest for about 1 hour.

Filling: Take sauce pan. Fill it about ¾ with water and add potatoes and a pinch of salt in it.Boil the potatoes until they become soft from inside. Whey potatoes are ready take them out from the saucepan and let them cool for 15 minutes. Now peel the boiled potatoes and brake them in big chunks by hands.Take a pan and put it on the stove. Add ghee in it and boil it on medium heat. add cumin and stir for 1 minute. Put all the chunky potatoes in it and mix them well. Now add salt, red chilli powder ,red chilli flacks, garam masala, coriander powder and stir it gently. Now put final ingredients, green chillis and fresh coriander and mix it well. Take off the pan from the stove and let it cool.

Glue: In a small bowl add flour and slowly pour water in it.Make a thick glue.(honey like consistency).

Now take the dough,cut it into half and from each half make 3 equal size balls.take each ball and roll it on a rolling surface with the help of rolling pin. Dust the surface with some flour. Keep on rolling until it becomes very thin. Cut it into half and take one of them. From straight side,fold one end and at the edge apply some glue on it.take the other end and place it on the first one.press it down a little with your fingers. It becomes like a cone. Fill it about ¾ the portion with filling material. Apply some glue all around the edges and close the cone. samosa is ready to fry. similarly repeat the same procedure for each samosa.

In a deep pan on the stove add vegetable oil in it,fill it about ¾ the of it with oil.turn the heat on to medium heat. As soon as oil heat up take each samosa and drop it into hot oil. Fry 3 to 4 samosas at a time. Fry them for about 5 to 10 minutes on each side or until they become golden on each side. Serve them with green chutney and enjoy. 🙂
