This is an easy yet just like classic chocolate muffin recipe. These Chocolate muffins can used as afternoon tea snacks or these can also be part of lunch boxes. These Muffins can definitely keeps the kids happy. So follow the simple steps in the recipe give below and i hope you will like it.
1/3 cup of unsalted butter,softened
½ cup of powdered or confectioner sugar
1 egg at room temperature
¼ cup of cocoa powder
½ cup of all purpose flour
1/8 tsp of salt
½ tsp of vanilla essence
¼ tsp of instant espresso powder
1 tbsp of water
1/3 tsp of baking powder
1/8 tsp of baking soda
1 tbsp of milk at room temperature
1- In a bowl sift flour, cocoa powder, baking powder, baking soda and salt. Lightly mix them and set that aside.
2- Take another bowl, add sugar and butter and cream them with whisk until light and fluffy. Add egg and vanilla and whisk for about 2 to 3 minutes.
3- Add dry ingredients in the liquid mixture and mix them with light hand. Dissolve instant espresso powder in 1 tbsp of hot water and add it to the whole mixture along with milk. Fold the whole mixture with spatula.
4- Preheat your oven to 180 degree Centigrade. line your muffin tins with liners.
5- Fill each muffin tin. You can use 1/3 size of measuring cup in order to distribute the muffin mixture evenly.
6- Bake for about 20 minutes.Take them out and cool them completely on wire rack and enjoy..
