Aloo Pakora (Potato Fritters)

INGREDIENTS:

1 cup of Besan (Gram flour)
1 tsp of salt
1 tsp of chili flakes
1 tsp of red chili powder
1 tsp of ground black pepper
½ tsp of cumin seeds
½ tsp of coriander
¼ tsp of ajwain (Carom Seeds)
1 ½ cup of water
4 to 5 medium sized potatoes
Vegetable oil for frying

PROCEDURE:

In a bowl add gram flour,salt,chili flakes,red chili powder,black pepper,cumin seeds,coriander and ajwain (Carom Seeds) .Quickly mix them.Now slowly start adding water to it and keep mixing until whole mixture comes together.It should have a loosely batter like consistency.If the batter is too thick or too thin it won’t stick to the potato chips.So,keep it in a middle.Let it rest for 30 minutes.Take the potatoes and peel them.Cut them in 1/8 inch thick circles.Rinse them well.

Add vegetable oil in a frying pan. Heat the oil on medium heat.Take each potato chip,dip it in besan (gram flour) batter and drop it in hot oil.One by one,repeat the process and drop 8 to 10 potato chips in one batch .It depends on the size of pan,don’t overcrowd the pan otherwise temperature of oil drops. Fry them until they become golden from each side.Take them out and serve them with green chutney and ketchup.
